Recipe of the Week: Healthy Fall Chili with Treasure Valley Salsa

Chips and salsa are starting to wane as the weather cools off. I still love finding ways to incorporate salsa into meals becuase I love giving food an extra kick. Our friends at Treasure Valley Salsa sent over this recipe for Healthy Fall Chili with Treasure Valley Salsa. I can't wait to try it out and see if it is as good as it looks and sounds. Treasure Valley Salsa can be found in the natural food section in Fred Meyer stores across the state.

Healthy Fall Chili with Treasure Valley Salsa

Total preparation time: 25 minutes

Ingredients:
2 tbsp. olive oil
1 lbs ground meat (turkey or beef)
1 yellow onion - diced
16 oz. jar of Treasure Valley Salsa Original Recipe - Medium
15 oz. can of black beans - undrained
15 oz. can of pinto beans - undrained
15 oz. can of whole kernel corn - undrained
1 clove garlic - crushed
1 teaspoon sea salt

Directions:
In a 4-quart saucepan add olive oil and cook ground meat. Drain fat. Add diced onions. Cook until onions soften. Turn to medium heat and add 1 jar of Treasure Valley Salsa. Continue cooking while adding black beans, pinto beans, corn, and crushed garlic. Bring to a boil for 1 min., then reduce heat to medium, stir in salt. Stir until liquid thickens (10 min.) . Turn off heat, cover and cool for 5 min.. Serves 5. If desired, top with your favorite cheese or sour cream.
